notes on iron chef

While I love watching “Iron Chef” I am always left with this question. How do the chefs plan the menu to be cooked when they all don't know what the secret ingredient is? I wish the producers would include this clip wherein they plan the menu and indicate why the secret ingredient would work on the dishes that they need to prepare.

There's just this TV time gap. The chairman presents secret ingredient then suddenly all the chefs are already preparing the dishes and knowing what to cook. Just like magic. There is no huddle. No menu planning, no plating brainstorming. How did each team know exactly what they will be cooking and how they will go about it? I'd like to see that part.
